What You Need

6oz.  BAKER'S Semi-Sweet Chocolate

25 JET-PUFFED Marshmallows, divided 

Suggested decorations: BAKER'S ANGEL FLAKE Coconut, food colorings, colored sugar, pretzel sticks, ring-shaped toasted whole grain oat cereal, decorating icing, chow mein noodles, PLANTERS Nuts, small candies

Make It

MELT chocolate as directed on package. Dip 20 marshmallows, 1 at a time, in chocolate, turning to evenly coat each marshmallow. Gently shake off excess chocolate. Place marshmallows, in single layer, on sheets of waxed paper. Reserve remaining melted chocolate for decorating. (NOTE: If decorating coated marshmallows with coconut hair, place 1/2 cup coconut in small resealable plastic bag. Add 2 drops each green and yellow food coloring; seal bag. Shake to evenly tint coconut. Arrange on tops of coated marshmallows. If desired, pinch coconut into a mohawk cut before placing on marshmallows.)
LET marshmallows stand at room temperature 2 hours or until chocolate is firm.
CUT each of the remaining marshmallows crosswise into 4 pieces with clean kitchen shears. Cut v-shaped notch out of each piece for the shoes. Dip cut-sides in colored sugar. Attach 1 notched marshmallow to bottom of each chocolate-covered marshmallow with a dab of the remaining melted chocolate.
DECORATE coated marshmallows with remaining decorations as desired. For bolts: Cut pretzels into 1/4-inch lengths. Insert 1 pretzel piece into each cereal ring; insert 2 pretzels into opposite side of each marshmallow, securing each with a dab of melted chocolate. For eyes, nose, scars and other hair styles: Decorate marshmallows with remaining ingredients as desired.

Makes 3 dozen
2 1/2 cups all-purpose flour
1 teaspoon baking powder

1 teaspoon baking soda

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup butter, softened

1 1/2 cups white sugar

1 cup canned pumpkin puree

1 egg

1 teaspoon vanilla extract

frosting:

1/2 cup softened butter

1/2 cup softened cream cheese

2-3 cups powdered sugar

1 tsp. vanilla extract

1 tsp. ground cinnamon

directions

1. Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.

2. In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.

3.Bake for 15 to 20 minutes in the preheated oven.

4. Make frosting: cream butter and cream cheese together. Slowly add powdered sugar and mix with an electric mixer until thick and creamy. Add vanilla and cinnamon.

5. When cookies are cooled- add frosting on top

***next time will add chocolate chips

3	oz	Artichoke Hearts, Sliced
2	oz	Salami, Julienne
2	oz	Ham, Julienne
2	oz	Provolone Cheese, Julienne
2	oz	Pepperoni, Julienne
2	oz	Grape Tomatoes
8	oz	Green Olives
3	oz	Italian Dressing
6	oz	Kalamata Olives
2	oz	Red Onion, Sliced
4	oz	Red Peppers, Roasted

Directions

• Drain olives, artichoke hearts, and red peppers.
• Toss together in a large mixing bowl
• Julienne Ham, Genoa, Pepperoni, and provolone into ¼ slices and add to mixing bowl.
• Add grape tomatoes and sliced red onion to mixing bowl
• Add salt, pepper, and Italian dressing
• Toss salad until all ingredients are completed mixed

School Time...School Shopping

So it's that time again.....School shopping. School starts in 15 days here for my oldest. And 20 days for my youngest....Wow so today I was very happy with my buys I went to the GAP and got 5 tee shirts a pair of Jeans, a pair of Shoes and a light Jacket for fall....All for $80 seems good to me. Still need to do some more but that will come when we go into the city in a few weeks. I have never seen two kids so excited to go Backpack shopping. WOW they both pick out really great ones to..I am not ready for school to start I am going to miss my kidos. This summer has went by so fast...I really don't like the cold weather, I guess I should be happy that it dosen't get to cold here but in still not going to like it..lol

Yummy Salsa Recipe

So I have been looking for a salsa recipe and could not find one anywhere......Well a friend of mine gave me a recipe that was good but not great so I tweaked it and not I have a super good one (I think).

I double or triple....

Salsa

1 Cup Diced Tomato

1/4 Cup Diced Onion

1/4 Cup Chopped Cilantro

2 Jalapenos, Steamed Seeded and Diced

1/2 a Green Chile, Steamed Seeded and Diced

1 Garlic Clove Chopped

1/4 teaspoon Kosher Salt

1/4 teaspoon Sugar

1/4 Cumin

1 Tablespoon Lime Juice

I throw it all in the blender and puray

You can keep chopped if you like chunky salsa

missing the gym

So I have been going to the gym and it is nice noticing some changes...Well about a month and a half ago I had to go do some Soccer drills because I told both my boys I would coach there teams. One is U6 and the other is U8. So I must have rolled my ankle one of the days I have to go do drills....(I also got stung by a be the 2nd day of drills). So I kept going to the gym in the mean while not knowing anything was wrong with me ankle. Over the last month it started to swell and hurt. Me thinking it would be OK and just get better it didn't it got worse....So I took a few weeks off iced and wrapped my ankle and this morning was my first day back at the gym. I never thought I would say it but I missed it and it felt so good to be back today..I really never thought I would find the love that you hear about...Guess i did.

Fruit Filled Oatmeal Cookies

Fruit Filled Oatmeal Cookies

1/2 Cup Softened Butter
3/4 Cup Firmly Packed Brown sugar
1/2 Cup Granulated Sugar
2 Eggs
1 teaspoon Vanilla
1 1/2 Cup All-Purpose Flour
1 teaspoon Baking Soda
1 teaspoon Groung Cinnamon
1 teaspoon Salt (optional)
3 Cups Quaker Oats (Quick or old fashion, uncooked)
3/4 Cup Dried Cranberries
3/4 Cup Dried Blueberries
1/2 Cup Crushed Almonds

Heat oven to 350

In a large bowl, beat butter and sugars untill creamy.
Add eggs and vanilla; beat well.
Add flour, baking soda, cinnamon and salt; mix well.
Add oats and fruit; mix well.
Drop dough by rounded tablespoonfuls onto ungreased cook sheet or foil.
Bake 8 to 10 minutes or until light golden brown. Let cool.
Store tightly covered.

Little local trip

So I thought that I would share our little local day trip we took to Montezuma Castle and Montezuma Well....It was fun to see the kids explore and be able to ask questions. My oldest son didn't want to be in any of the pictures but all 4 of us were really on this little trip..haha. It was so neat to go check these places out...I can't belive that they really lived like this it is so amazing...People could never do this in the day and age..Amazing how things have changed....
